
Join us as WICE continues its lively wine course with popular instructor, Tom Boothe and an exciting line-up for the new year when we will approach France, Italy, Spain, and Germany from a new angle and in addition experience yet another happy marriage of food and wine. All of the sessions offer unique opportunities for wine lovers, from debutantes to sophisticated oenophiles.
We will have the privilege of gathering in the home of one of our faithful participants for the tastings, but we’ll be traveling to the terroirs of some of the great wines of France and beyond, as Tom guides us through handpicked selections each evening. We will smell and breathe and taste... and taste again... until the characteristics of the wines are a part of our sense memory.
If you haven’t already taken a class with Tom (and he has a large group of loyal fans!), then you’re in for a treat. Some wine instructors use the same old words to describe the same old things about a wine’s aroma and taste. Tom thinks about wine in a different way.
“Act as if it's someone you love,” he suggests, and then gives us a range of tools so that we can recall the characteristics the next time we smell and taste.
What does the smell remind us of (sweet molasses, roasted hazelnuts, exotic fruit, grandma’s attic)? How will we remember these smells when we meet this wine again? How does the wine move when we taste it? How does its personality reveal itself? What do the bass notes sound like?
The smelling and tasting process is very personal. Tom encourages us in our imaginative thinking and in remembering the wine in a way that means something to us. But, if we get stuck, he's always ready with a metaphor so unique that it will stay in our memory for a long time. (“Think of a cigar factory burning down in an orchard of cherry trees.”). And, with those kinds of images, we will remember these wines for a very long time.
