Our summery Thai-French Fusion Grilled Tuna has a nifty exotic marinade of Thai and other spices and condiments. We'll talk about how you could also use salmon or swordfish.
After a brief bath in the flavorings, the fish is ready to grill on the indoor stove-top grill or outdoor BBQ. Chef Randall likes to serve it with a mango - cucumber salsa.
Chocolate Roulade Cake with Fresh Berries
Our light and fresh dessert will incorporate berries to celebrate spring. Chef Randall will demonstrate his tricks for making an easy roulade (rolled) chocolate cake.
The result is a "wow" kind of cake with its creamy filling and bright, tangy fresh berries. Only you will know just how easy it is to make while you impress your guests.
This cake has a light touch of chocolate and a not-too-sweet filling. Any fresh berries, or mix of berries, you have on hand will work well.
Techniques you will learn include how to: marinade and grill fish, grill using a stove-top iron griddle, make a fresh salsa for serving, make a rolled cake, and how to make a mascarpone-cream filling.
About the Instructor: Chef Randall Price will share with us his passion for French cuisine, drawing on his 25 years of experience cooking France for heads of state and working as Chef-Instructor at the professional Paris cooking, Ecole de Cuisine La Varenne. His entertaining style, easy-to-follow demonstrations and focus on classic techniques will inspire you to reproduce dishes at home.
