If one were forced at gunpoint to name the wines that best express springtime, Sancerre and Pouilly Fumé would become life saving words. Floral, mineral, staccato, and obsessed with their own clarity and articulation, these Sauvignon Blanc-based wines are easy to love. “And Co.” refers to the added bonus of some excellent Sauvignon Blancs from other parts of the world . . . for the pleasure of discovering them and also to help us see more clearly how the low flinty hills of the eastern Loire are spoiling us.
