Champagne is mostly known as a celebratory wine served to mark special occasions, but it is also a very food-friendly wine. Sommeliers and chefs love working together to pair champagne with main courses, even spicy Indian dishes! But… not all types of champagnes pair well with all types of foods. The grape varieties used in the blend, the amount of time spent ageing, and the amount of sugar added during disgorgement for example, profoundly impact the taste profile of a champagne. You wouldn’t want to serve a bone dry vintage champagne with a sweet dessert. It would leave a bitter taste in your mouth.
